Fresh or dried pasta - which is better? This is an age-old debate which often results in dried pasta being crowned the winner, mostly due to its cooking convenience and long-lasting shelf-life.

However, you have probably heard many pasta lovers repeatedly argue that fresh pasta is better than dried pasta. You'll often hear fans of fresh pasta explain that “it just tastes better” or “you must try it to know the difference”.

It all starts with the ingredients.

Did you know, fresh pasta and dried pasta actually have two completely different types of recipe? 

Fresh pasta dough is typically made using flour and fresh eggs - compared to dried pasta, which usually uses a combination of water and durum flour or semolina.

By using super-fresh eggs in our dough recipe, all of our pastas have a soft, rich and velvety texture - not to mention a vibrant and glorious golden-yellow colour.

Dried pasta is well-known for being quick and easy to cook - however you may be surprised to know that fresh pasta cooks in just a fraction of the time compared to dried pasta! Just 3-4 minutes in fact. Now that’s a ‘faster-pasta’!

This makes it the perfect ingredient to have ready-to-go in your fridge for your mid-week meals or when you’re in a rush to get something comforting and wholesome on the table for lunch or dinner.

When should you use dried pasta instead of fresh?

Don’t worry…dried pasta still has its place in the kitchen.

Some pasta dishes work better with dried pastas - which are easier to cook al dente and are robust enough to stand up to heavier sauces, like a hearty Bolognese or Ragù.

Dried pasta also lasts longer in the pantry, so you can keep it on hand for quick meals and comes in all sorts of wonderful shapes and sizes.
